
We always had company dropping in when I was growing up. The door was always open. Mom was a master of whipping up a quick dinner for extra people. Barbecue sandwiches fit the bill — they’re quick and delicious with her own special BBQ sauce. Serve with dill pickles, chips and coleslaw.

Mom’s Ground Beef Barbecues

- 12" skillet
Ingredients
- 2 lbs ground beef
- 1/2 cup chopped onions
- 2 1/2 cups chopped celery
- 1/3 cup vinegar(apple cider)
- 1/3 cup brown sugar ( packed)
- 2/3 cup water
- 1 tbsp flour
- 1/2 cup ketchup
- 3 tbsp mustard
Instructions
- Brown ground beef and onion. Add salt and pepper to taste. Drain.
- Add celery and mix.
- Combine remaining ingredients in a bowl and mix. Pour into skillet and stir. Cover and cook for an hour or until celery is soft. Serve on hamburger or hogie buns.
