The Holidays are a busy time for everyone. In our family that meant heading to Mom and Dad’s way up in northern Wisconsin (Ashland, WI to be specific) to celebrate with my sister and her family who came from Wisconsin Rapids. There were 3 of us and 4 in my sister’s family along with Mom and Dad We managed to fit into their 2 bedroom house and enjoy the Holidays together.
One of our annual events was my Dad making his famous turkey soup which he proudly prepared for the group. He always made an abundant amount since he was used to cooking for a lot people growing up in a family of 12 children. It was delicious and warmed us up after a day of ice fishing, skating and the kids building snow forts. Mom always had homemade bread to go with our turkey soup, which was a perfect match.
Secret Turkey Soup Ingredient
One year my son found a bug in his soup and decided to preserve it and wrap it up as a present to Grandpa calling it “his secret ingredient”. We all had a good laugh about that every year.
We don’t have any bug-related recipes, but we do recommend our Choco No Bake Oat Bars for a light dessert after this yummy turkey soup.


Dad’s Super Turkey Soup
Equipment
- Dutch oven
Ingredients
- 2 cups cooked shredded turkey
- 8 cups water
- 1 28 oz can diced tomatoes
- 3 cubes chicken bullion
- 2 cups celery, chopped
- 2 cups carrots, sliced
- 1 medium onion, diced
- 1 tsp basil
- 1/2 tsp thyme
- 1 bay leaf
- salt & pepper to taste
- 2 cups egg noodles
Instructions
- Use a Dutch oven and pour in 8 cups of water
- Add shredded turkey, tomatoes, celery, carrots, onion, cubes, and spices.Optional: add other vegetables and chicken broth.
- Cook on medium low for 1 1/2 hours; add the egg noodles the last 15 minutes.
