My Grandpa loved his pork chops and fresh garden vegetables. He was a meat and potatoes man. Grandma made sure he had a hardy meal after working on the Ore docks as a foreman for the Soo Line Railroad. The huge ore boats came in and were loaded with ore to ship from Lake Superior to the East Coast. The docks are gone now but back in the day Ashland was a bustling port.
Skillet Pork Chops
An easy dinner for a working Mom or Dad.
Equipment
- 12" skillet
Ingredients
- 2 1/2" Boneless pork chops
- 1 small onion sliced
- 1 clove garlic ,crushed
- 1/2 cup chicken stock
- 8 small red potatoes
- 8 baby carrots
- 8 cherry tomatoes
- salt & pepper to taste
Instructions
- Brown pork chop in lightly greased skillet,salt and pepper to taste. 5 min on each side. Remove from skillet.
- Saute onions and garlic. Add pork chops.
- Add chicken stock, potatoes and vegetables. Cook on medium low heat covered 1 hour or until pork and vegetables are thoroughly cooked.
